Beef and Zucchini Noodles (Zoodles) with Tomato Sauce

Ingredients:

  • 200g lean beef steak, thinly sliced

  • 2 medium zucchinis, spiralized into noodles (zoodles)

  • 1 can (14 oz) diced tomatoes (no salt added)

  • 2 cloves garlic, minced

  • 1/2 onion, finely chopped

  • 1 teaspoon olive oil

  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)

  • Salt and pepper to taste

  • Optional: fresh basil leaves for garnish

  • Optional: grated Parmesan cheese for garnish

Instructions:

  1. Prepare the Beef:

    • Season the thinly sliced beef with salt, pepper, and half of the minced garlic.

    • In a non-stick skillet over medium-high heat, cook the beef slices for about 2-3 minutes per side or until browned. Remove from skillet and set aside.

  2. Make the Tomato Sauce:

    • In the same skillet, add olive oil over medium heat.

    • Add the chopped onion and remaining minced garlic. Sauté until translucent, about 2-3 minutes.

    • Add the can of diced tomatoes (including the juice) and Italian seasoning.

    • Let the sauce simmer for about 5-7 minutes to allow the flavors to meld. Season with salt and pepper to taste.

  3. Cook the Zucchini Noodles:

    • While the sauce is simmering, spiralize the zucchinis to make zoodles.

    • In a separate skillet or pot, bring water to a boil. Add the zucchini noodles and blanch for 1-2 minutes. Drain well.

  4. Combine and Serve:

    • Add the cooked beef slices to the tomato sauce.

    • Gently mix in the zucchini noodles and stir until everything is well coated with the sauce and heated through.

    • Serve hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
